Arabic Gum by Agrigum, natural and multitasking
Gum Arabic– also known as E414or Gum Acacia– is a natural gum harvested from the exterior of Acacia trees. It is the air-hardened, gummy exudates flowing naturally from or obtained by incision of the trunk and branches of Acacia Senegal and Acacia seyal trees in the form of dry, hard nodules about 10-15 mm in diameter, ranging from almost colourless to brown. Major source of Gum Acacia is in the Sudan; other important sources are Chad, Senegal, and Nigeria.
Thanks to its features, Gum Arabic is extensively used in the food, pharma, cosmetic, and paints industry.
In the food industryit is mainly used as emulsifier, stabilizer, thickener, humectants, texturizer, adhesive, soluble fibre, coating and glazing agent.
The Senegal type is an excellent emulsifier and stabilizing agent.It produces stable emulsions in a wide range of pH and also in the presence of electrolytes, without requiring a further stabilizing agent.
Gum Acacia is used extensively in the production of confectioneryproducts. Usage is again based on the natural properties of Gum Acacia such as viscosity, emulsification ability, adhesion, film-forming, pH stability and excellent compatibility with other gums and starches. These natural properties ensure that the final products have the correct texture, adhesion, and coating, as well as a controlled flavor release and sugar crystallization.
In the area of dietetic confectionsfor low sugar and low calorie diets, it performs very satisfactorily in replacing the bulk and texture of sugars in combination with artificial sweeteners, e.g. Sorbitol, as well as providing binding and fibre content. 
In fat containing confectionslike caramel and toffee, Gum Acacia keeps the fat uniformly distributed throughout the product, preventing it from rising to the surface where it causes problems as an easily oxidized greasy film.
It is an excellent coating agentin coated products, like dragees, chewing gums, chocolate centres, nut centres, coated almonds, bakery products.
Gum Arabic is also very used in the beverage industry; the main property used is the ability to produce and stabilize emulsions.
In beersit improves clarity and foam stability. In orange squash beverages it can be used as a cloud stabilizer.
In wine finingvery low levels of Gum Acacia react with proteins to form flocs and sediments which can be then removed by decanting or filtration to clarify wine and stabilize its color.
