The July issue of “Tecnica Molitoria” is now available

The new issue of TECNICA MOLITORIA is now available with a paper on the quality characteristics of the white “gianco” soft wheat (Triticum aestivum L.) from Rocchetta Vara (Italy). Another paper investigates the origin, diffusion and baking methods of flat breads.
