The January 2014 issue of Tecnica Molitoria is available now
The January 2014 issue of “Tecnica Molitoria” is now available, featuring two scientific papers of practical interest for the sector. The first one reports the results of the validation study concerning a new enzyme immunoassay for the analysis of fumonisins in maize; the second one presents the experiments conducted to obtain functional bread containing spent grains deriving from beer production.
