Tecnica Molitoria of March is now in shipping
The March 2014 issue of Tecnica Molitoria is now available, featuring as usual two papers and various departments. The first paper reports an overview on anti-staling agents for the bakery industry, while the second paper describes the results of a study aimed at assessing if maize drying parameters influence the detection of fumonisin content in maize kernels.
Among the news in the departments: the last part of the report on machines and accessories on show at Jtic exhibition in Reims; good previews for the 2013 and 2014 cereal production; aquaculture world record production in 2013 and good projections for a growing future; Italy is a major importer of Kamut khorasan wheat; statistics on the top-selling pasta shapes on the market; the low-carbohydrate diets are coming back; and so on.
