The June 2014 issue of Tecnica Molitoria is now available!
In the June issue of Tecnica Molitoria you will find: a research on pasta production with wheat flour rendered gluten-free thanks to selected lactic acid bacteria and fungal proteases; and a paper featuring the results of five thermal treatments carried out in different milling plants in Europe, employing propane and electric heat generators.
